Keto Mini Meat Loaf

Perfect for lunches and dinners, this recipe is a simple and delicious version of an all-time classic. This adaptation allows you to enjoy a flavorful and moist meatloaf without stepping out of your keto diet.

1 lb ground beef blend

1/4 cup crushed pork rinds

4 cloves garlic

1/2 cup sugar-free ketchup

1 tbs Worcestershire sauce

1.5 tsp salt

1 tsp dry chopped onion

1 egg

1 tbs brown sugar replacement

Step 1

In a large bowl, combine half of the ketchup, ground beef, crushed pork rinds, the four garlic cloves crushed, Worcestershire sauce, salt, dry onion, and the egg. Mix with your hands until homogenous.
Optional: for a smoother and deep flavor, you can sauté the garlic cloves before adding them to the meatloaf mixture.

Step 2

Once it's thoroughly combined, split into four equal portions, and place in the air fryer for 25 minutes at 350°. 

Step 3

For the ketchup topping, combine the remaining half of your sugar-free ketchup, and mix with the brown sugar replacement. Brush the top of the meatloaf with the ketchup mix, and cook for an additional 3 to 5 minutes.

Step 4

Garnish with some fresh parsley and serve with your favorites keto-friendly sides. I plated mine with green beans sautéed with olive oil and salt.
