Keto Shepherds Pie

I've been craving a good shepherds pie for a bit and the thought of slathering caulimash over the top of ground beef is everything I need in my life right now for true happiness. Try it out and I bet it will quickly become a family favorite.

2 tablespoons of butter⁣

Half a cup chopped onions⁣

3 teaspoons minced garlic⁣

1 pound ground beef⁣

Salt and pepper to taste⁣

2 tablespoons tomato paste⁣

2 tablespoons no sugar added ketchup ⁣

One cup beef broth⁣

1 cup frozen mixed veggies or low carb veggies of choice. ⁣

For cauliflower mashed top:⁣

24 oz frozen cauliflower⁣

1/2 cup chicken broth⁣

1tbs butter ⁣

2 TBS Chive onion cream cheese⁣

1 cup shredded cheese (I used fiesta blend)⁣

Salt and pepper to taste⁣


Preheat oven to 400 degrees. Melt butter in cast-iron skillet. Add onions and sauté until translucent. Add garlic and sauté an additional 30 seconds. Add ground beef and brown. Season with salt and pepper. Drain if there is excessive grease. Add tomato paste, ketchup and beef broth. Add veggies and simmer until thickened (about 15 minutes)⁣

While meat is simmering add cauliflower to instant pot with 1/2 cup chicken broth. Cook on high pressure for 5 minutes and natural release. Blend with an immersion blender and add all remaining ingredients. If it's a thin consistency, turn instant pot on saute and cook a little until it thickens a bit. ⁣

Add the cauliflower mash to the top of the beef mixture. Spread evenly with a spatula. Cook at 400 degrees for 15 minutes. Then broil on high for 5 minutes until caulimash is lightly browned.
