Ladies and gentlemen, I give you: The Meatsagna. It has all the goodies: the meat, the cheese, and the sauce, all with the twist of using sliced deli meat as the pasta sheets. Great for sharing meals, but still simple and easy. Enjoy!
Prep time: 35 minutes
Cook time: 30 minutes
Total time: 65 minutes
Yield: serves 4-6
3/4 cup (2.4 oz) Parmesan cheese
1 tbsp parsley
1 lb ground beef
18 oz low sugar marinara
12 oz mozzarella
12 sliced deli meat (I used turkey breast)
Salt and pepper to taste
Olive oil (optional)
In a large bowl, mix the ricotta cheese, half of the parmesan cheese, and the eggs. Set aside.
Heat a tablespoon or two of extra virgin olive oil in a saucepan. Brown the meat, drain the excess fat, and add the marinara sauce. Cook for a few minutes more, and adjust with salt and pepper to taste.
To start the assembly, spread some meat sauce to the bottom of a 9x9 pan.
Place the first layer of deli meat, then half of the ricotta mixture, then meat sauce, and lastly, the mozzarella. Repeat the layers with the remaining ingredients, saving a little mozzarella to top the lasagna.
Finally, cover the surface with the remaining mozzarella and parmesan cheese.
Cook at 350°F (177°C) for 25 minutes. And then broil for 5 minutes or until golden brown. Finally, serve and garnish with some fresh parsley.
